As October 20th approaches, Kappou has noticed something that many of our female guests seem to love about Omakase: the rich, silky texture of fish as it slowly melts on the palate.
Yet in the world of Omakase, even the word “rich” can take on countless nuances. Some fish feel lush and full-bodied, others deeply creamy and savory, while some offer only a light, clean richness that disappears almost instantly. The same is true of “softness”, moist and tender, smooth and delicate, gently springy, or so soft that it nearly melts the moment it touches the tongue.
As the seasons change, ingredients such as Kinmedai, Amadai, Kamasu and many others each bring their own expression of texture, richness, and finish. Some feel rounded and generous from the very first bite, while others are lighter and more refined, leaving only a subtle sweetness at the end.
Then there is Uni, a world of its own. Its creamy texture, distinctive aroma, and deep taste of the sea need little introduction, yet even uni comes in many varieties, regions, and expressions: from delicately sweet and lightly creamy to intensely rich, layered, and lingering.
Perhaps that is what makes the Omakase journey so fascinating. It is not simply about which fish is being served that day, but how the same ideas of “rich,” “soft,” or “creamy” can be interpreted in entirely different ways by each ingredient.
With the special occasion approaching, Kappou warmly invites you to reserve your table in advance so we can prepare the most complete Omakase experience for you.
