These coffee beans come from the Chelba Mill, produced by approximately 700 coffee farmers in the surrounding area.

Carefully picked coffee cherries are immediately delivered to the processing station.

After pulping, the beans are fermented in water for about 2 days, then washed in channels with Chelba river water to remove remaining mucilage.

The parchment coffee is placed on raised beds for sun-drying, which takes about 8-10 days depending on weather conditions.

Ethiopia Yirgacheffe Chelba washed is a distinct specialty coffee featuring bright citrus, delicate jasmine floral notes, and a clean tea-like body.

The Kenya Kirinyaga Cimba Geisha Natural (an experimental lot by Dorman and Cimba Station) is an exceptional coffee. It pairs the classic, vibrant complexity of Kenyan coffee with the exotic, tropical aromatics and syrupy-smooth mouthfeel of the Geisha variety.

Tasting Notes & Profile :

Aroma: Jasmine, lilac, and lemon verbena.
Flavor: Tropical fruits like pineapple, passion fruit, and orange,
layered with grape, blackcurrant, and dark chocolate
undertones.
Acidity & Body: Sweetly tart acidity with a full, syrupy-smooth
mouthfeel.
Finish: Chocolaty and tangy.

Compared to a traditional washed Kenyan coffee (which usually features clean citrus and bright acidity), this natural-processed Geisha leans heavily into rich, concentrated fruitiness and sweetness while maintaining a floral elegance. Because it is a small-batch experimental lot, it is highly limited and produces a much more jammy, juicy cup.

The aroma is intense and complex, often carrying hints of vanilla, sandalwood, and sweet spice.

Yemen Mocca Haraz coffee is grown in the heights of the mountainous Haraz region at an altitude of 1800-2200 m above sea level, which enjoys moderate temperature and low humidity. Such climate is one of the most important factors for its quality as well as the quality of the water used to irrigate the coffee trees. It depends on rainwater, dams, and springs from the peaks of the mountainous highlands. With a balanced mineral texture and fresh taste, giving the fruits of the coffee a unique sweet taste.

Traditional drying is practiced under the sunlight without washing, being as a distinctive feature of the Harazi coffee and Yemeni coffee in general, where the coffee peel gives an additional value of the sharp flavor of the fruit in a generous giving similar to mother-baby relation.

The fruits of the coffee are placed on mats made of palm trees on a raised beds and carefully swerved by hand so that the surface of the shell receives equal amount of sunlight, until the internal moisture reaches 13%.

The term "Mocca" (or Mocha) refers to the historic Yemeni port of Al-Makha, which was once the global epicenter of the coffee trade.
