Following up on yesterday’s "Sour Coffee" story: How do you fall in love with acidity when your tongue is addicted to bitterness? 🤔
Don't force yourself to drink 100% Specialty right away. Your palate needs training, just like a muscle at the gym. Try this "Acidity Escalation" plan over 4 weeks:
🗓 Week 1: The Intro
Blend 30% Specialty + 70% Traditional (Dark Roast).
💡 Tip: Use hotter water (88-90°C) to reduce the perception of sourness.
🗓 Week 2: The Challenge
Move to a 50/50 mix. By now, your brain stops sending "danger" signals about the new flavor.
🗓 Week 3: The Discovery
70% Specialty + 30% Traditional.
Lower the water temp to 82-85°C. You will start noticing the sweet aftertaste hiding behind the acidity.
🗓 Week 4: Graduation
100% Specialty. Congratulations! You have officially entered the world of floral, chocolate, and fruity notes.
Once you are used to it, you'll find the acidity addictive. But to taste it like a true pro, you need to make some noise... specifically, a "slurping" noise. 🤫

The First Shock - Why is "Fancy" Coffee So Sour?

Did you just spend good money on a bag of Specialty Coffee, brew the first cup, and... wince? 😖
"Is this coffee or lemon juice? Have I been ripped off?"
Don't pour it down the sink just yet! You aren't being scammed; you are simply experiencing the "Anti-Taste Effect." This is your brain's natural reaction to a flavor that contradicts the bold, bitter profile most of us grew up drinking.
So, why is high-end coffee sour?
1️⃣ Light Roast: Just like a rare steak preserves the meat's quality, a light roast preserves the bean's natural acidity (fruity notes) and sweetness. Dark roasts burn these acids away, leaving only bitterness.
2️⃣ Pure Arabica: Specialty coffee is usually Arabica grown at 1200m+. At this altitude, beans develop complex organic acids (citrus, apple, berry) creating that expensive, elegant tartness.
3️⃣ Washed Processing: This method washes away the fruit flesh, revealing the bean's true "personality"—clean, bright, and crisp.
This acidity isn't "spoiled"—it's the taste of tropical fruit! 🍒🍋
