Tại Tamba, hành trình ấy bắt đầu từ những cây cà phê được chăm sóc tại vùng nguyên liệu ở Gia Lai, tiếp nối qua mùa thu hoạch, tuyển chọn và sơ chế trước khi trở thành cà phê nhân xanh và bước vào nhà rang.
Từ hơn 200 ha trang trại trên vùng đất bazan, Tamba chủ động kiểm soát nhiều công đoạn trong chuỗi sản xuất, từ chăm sóc cây, thu hoạch, sơ chế đến rang xay. Mỗi công đoạn là một điểm kiểm soát khác nhau, cùng góp phần tạo nên chất lượng của hạt cà phê trước khi được thưởng thức.
𝐂𝐡𝐚̆𝐦 𝐬𝐨́𝐜 𝐜𝐚̂𝐲
Trước khi có một mùa thu hoạch, công việc tại Tamba Farm đã bắt đầu từ nhiều tháng trước đó. Bao gồm việc chăm sóc cây, quản lý đất, dinh dưỡng và nguồn nước trong suốt mùa vụ. Tamba cho biết trang trại sử dụng phân vi sinh nhằm duy trì sức khỏe của đất, đồng thời xây dựng hồ chứa và hệ thống kênh thủy lợi để chủ động hơn về nguồn nước trong điều kiện mùa khô kéo dài tại Gia Lai.
𝐓𝐡𝐮 𝐡𝐨𝐚̣𝐜𝐡
Đến mùa thu hoạch, quả cà phê được thu hái từ cây và đưa về khu vực tiếp nhận nguyên liệu.
Tại Tamba, việc lựa chọn quả chín và loại bỏ quả hỏng, quả xanh được xác định là một phần quan trọng trong giai đoạn sơ chế ban đầu. Với một số dòng cà phê Tamba được hái lựa thủ công và tuyển chọn kỹ trước khi bước vào các công đoạn tiếp theo.
Trong kỹ thuật cà phê, đây có thể xem là bước kiểm soát nguyên liệu ngay từ đầu vào. Bởi một mẻ cà phê đồng đều không thể bắt đầu từ một nguồn nguyên liệu thiếu đồng nhất.
𝐓𝐮𝐲𝐞̂̉𝐧 𝐜𝐡𝐨̣𝐧 𝐪𝐮𝐚̉
Quả cà phê cần được kiểm tra và tuyển chọn để loại bỏ những quả không đạt yêu cầu trước khi bước vào processing. Việc này nhằm hạn chế sự xuất hiện của quả xanh, quả hỏng hoặc nguyên liệu không phù hợp trong cùng một lô. Chất lượng cà phê phụ thuộc đáng kể vào giai đoạn sơ chế ban đầu, trong đó việc chọn quả chín, loại bỏ quả hỏng và quả xanh là những yếu tố quan trọng.
Từ đây, quả cà phê đã sẵn sàng bước vào công đoạn quan trọng nhất của giai đoạn Post-Harvest Processing.
𝐂𝐡𝐞̂́ 𝐛𝐢𝐞̂́𝐧
Processing là quá trình biến quả cà phê sau thu hoạch thành nguyên liệu có thể tiếp tục làm khô, bảo quản và xử lý thành green coffee.
Trong chuỗi cà phê nói chung, phương pháp chế biến có thể bao gồm Natural/Dry Process, Washed/Wet Process hoặc các phương pháp Honey/Pulped Natural. Tuỳ phương pháp, các bước có thể liên quan đến việc xử lý vỏ quả, lớp nhầy (mucilage), lên men (fermentation), rửa và làm khô.
Với Tamba, đây là công đoạn được chủ động kiểm soát trong chuỗi sản xuất từ farm đến thành phẩm. Tamba cũng mô tả cà phê nhân được sơ chế đặc biệt nhằm nâng cao chất lượng và hương vị của nguyên liệu.
𝐗𝐮̛̉ 𝐥𝐲́ 𝐯𝐚̀ 𝐩𝐡𝐚̂𝐧 𝐥𝐨𝐚̣𝐢 𝐡𝐚̣𝐭
Tùy theo phương pháp sơ chế, cà phê có thể cần loại bỏ lớp vỏ khô còn lại, làm sạch và phân loại. Những hạt không đạt yêu cầu cũng được loại bỏ để nâng cao độ đồng đều của nguyên liệu.
Trong ngành cà phê, đây là giai đoạn thường được gọi là xay xát và phân loại. Mục tiêu là tạo ra nguồn cà phê nhân sạch, ổn định và phù hợp cho quá trình rang.
𝐊𝐢𝐞̂̉𝐦 𝐭𝐫𝐚 𝐜𝐚̀ 𝐩𝐡𝐞̂ 𝐧𝐡𝐚̂𝐧
Tại Tamba, quy trình rang xay được bắt đầu từ tiếp nhận cà phê nhân và kiểm tra đầu vào, trước khi đưa nguyên liệu vào máy rang. Đây là bước giúp nhà rang xác định tình trạng nguyên liệu trước khi thiết lập quá trình rang phù hợp.
Ở góc độ chuyên môn, cà phê nhân xanh có thể được đánh giá dựa trên nhiều yếu tố như độ đồng đều, độ ẩm, kích thước hạt và đặc tính cảm quan. Đây cũng là giai đoạn mà thông tin về nguồn gốc, lô sản xuất và phương pháp processing có thể đóng vai trò trong việc truy xuất (Traceability) và kiểm soát chất lượng.
𝐑𝐚𝐧𝐠 𝐜𝐚̀ 𝐩𝐡𝐞̂
Từ cà phê nhân xanh, hạt cà phê bước vào quá trình Roasting – rang.
Dưới tác động của nhiệt, hạt cà phê trải qua nhiều biến đổi vật lý và hoá học, từ đó phát triển màu sắc, hương thơm và các đặc tính cảm quan. Kết hợp với đội ngũ kỹ thuật được đào tạo để kiểm soát quá trình rang. Quy trình làm việc gồm tiếp nhận cà phê nhân → kiểm tra đầu vào → rang → chứa thành phẩm.
Ở bước này, Roast Profile được xây dựng dựa trên đặc tính của nguyên liệu và mục tiêu của sản phẩm. Một mẻ rang tốt không chỉ nằm ở việc đạt màu rang mong muốn, mà còn ở khả năng tạo ra sự ổn định giữa các mẻ và thể hiện tốt đặc tính của hạt cà phê.
𝐗𝐚𝐲 𝐯𝐚̀ đ𝐨́𝐧𝐠 𝐠𝐨́𝐢
Sau khi rang, cà phê có thể được giữ ở dạng hạt hoặc tiếp tục qua công đoạn Grinding – xay.
Từ cà phê hạt hoặc cà phê bột, người thưởng thức tiếp tục thực hiện Brewing – pha chế, đưa nước tiếp xúc với cà phê để chiết xuất các hợp chất tạo nên hương thơm và vị trong tách.
Đây là điểm cuối của chuỗi Farm to Cup – nơi những gì bắt đầu từ cây cà phê tại farm cuối cùng được thể hiện thành trải nghiệm trong ly cà phê.

𝐅𝐀𝐑𝐌 𝐓𝐎 𝐂𝐔𝐏 – 𝐓𝐇𝐄 𝐉𝐎𝐔𝐑𝐍𝐄𝐘 𝐎𝐅 𝐓𝐀𝐌𝐁𝐀 𝐂𝐎𝐅𝐅𝐄𝐄
At Tamba, the journey begins with coffee trees carefully cultivated in the growing region of Gia Lai, continuing through harvest, selection, and processing before the coffee becomes green coffee and eventually enters the roasting stage.
Across more than 200 hectares of farmland on basalt-rich soil, Tamba takes an active role in controlling multiple stages of the production chain—from plant care, harvesting, and processing to roasting. Each stage represents a different point of quality control, collectively contributing to the quality of the coffee before it reaches the cup.
𝐂𝐨𝐟𝐟𝐞𝐞 𝐏𝐥𝐚𝐧𝐭 𝐂𝐚𝐫𝐞
Before a harvest season begins, work at Tamba Farm starts months in advance. This includes caring for the coffee trees, managing soil health, nutrition, and water resources throughout the growing season.
Tamba states that the farm uses microbial fertilizers to help maintain soil health, while reservoirs and irrigation channels have also been developed to improve water management during Gia Lai's extended dry season.
𝐇𝐚𝐫𝐯𝐞𝐬𝐭𝐢𝐧𝐠
When harvest season arrives, coffee cherries are picked from the trees and transported to the receiving area.
At Tamba, selecting ripe cherries and removing damaged or unripe cherries is considered an important part of the initial processing stage. For certain Tamba coffee lots, cherries are selectively hand-picked and carefully sorted before moving on to the next stages.
From a coffee processing perspective, this can be viewed as the first point of raw material control. A consistent coffee lot cannot begin with inconsistent raw materials.
𝐂𝐡𝐞𝐫𝐫𝐲 𝐒𝐞𝐥𝐞𝐜𝐭𝐢𝐨𝐧
Coffee cherries are inspected and sorted to remove those that do not meet the required standards before entering processing. This helps minimize the presence of unripe, damaged, or otherwise unsuitable cherries within the same lot.
Coffee quality is significantly influenced by the initial post-harvest stage, where selecting ripe cherries and removing damaged and unripe fruit are important factors.
From this point, the coffee cherries are ready to enter one of the most important stages of post-harvest processing.
𝐏𝐫𝐨𝐜𝐞𝐬𝐬𝐢𝐧𝐠
Processing is the process of transforming harvested coffee cherries into a form that can be further dried, stored, and prepared as green coffee.
In the coffee industry, processing methods may include Natural/Dry Process, Washed/Wet Process, or Honey/Pulped Natural methods. Depending on the method, the process may involve removing the fruit skin, managing the mucilage, fermentation, washing, and drying.
At Tamba, processing is an actively controlled stage within the production chain, from farm to finished product. Tamba also describes its green coffee as undergoing specialized processing intended to enhance the quality and flavor characteristics of the raw material.
𝐆𝐫𝐞𝐞𝐧 𝐁𝐞𝐚𝐧 𝐏𝐫𝐨𝐜𝐞𝐬𝐬𝐢𝐧𝐠 & 𝐆𝐫𝐚𝐝𝐢𝐧𝐠
Depending on the processing method, coffee may require the removal of remaining dry parchment, cleaning, and grading. Beans that do not meet the required standards are also removed to improve the consistency of the final raw material.
In the coffee industry, this stage is commonly associated with milling and grading. The goal is to produce clean, stable, and suitable green coffee for roasting.
𝐆𝐫𝐞𝐞𝐧 𝐂𝐨𝐟𝐟𝐞𝐞 𝐈𝐧𝐬𝐩𝐞𝐜𝐭𝐢𝐨𝐧
At Tamba, the roasting process begins with receiving and inspecting green coffee before the beans enter the roasting machine. This step allows the roaster to assess the condition of the raw material before establishing an appropriate roasting process.
From a professional perspective, green coffee can be evaluated based on various factors, including uniformity, moisture content, bean size, and sensory characteristics.
This is also a stage where information about origin, production lot, and processing method can contribute to traceability and quality control.
𝐑𝐨𝐚𝐬𝐭𝐢𝐧𝐠
From green coffee, the beans enter the roasting stage.
Under the influence of heat, coffee beans undergo numerous physical and chemical transformations, developing their color, aroma, and sensory characteristics. At Tamba, the roasting process is supported by a trained technical team responsible for monitoring and controlling the process.
The workflow includes green coffee receiving → incoming inspection → roasting → finished coffee storage.
At this stage, a roast profile is developed based on the characteristics of the raw material and the intended product outcome.
A good roast is not simply about achieving a desired roast color. It is also about maintaining consistency from batch to batch while allowing the distinctive characteristics of the coffee to express themselves.
𝐆𝐫𝐢𝐧𝐝𝐢𝐧𝐠 & 𝐏𝐚𝐜𝐤𝐚𝐠𝐢𝐧𝐠
After roasting, coffee can either be kept as whole beans or continue to the grinding stage.
Whether in whole-bean or ground form, the coffee then moves into Brewing, where water comes into contact with the coffee and extracts the compounds responsible for the aroma and flavor in the cup.
This is the final point of the Farm to Cup journey—where everything that began with a coffee tree at the farm is ultimately expressed as an experience in the cup.
