Hร  Nแป™iโ€™s heat can be hard on people, but it does something remarkable to wh**ky. The cityโ€™s swing between sticky summers and cold winters is why Vแป ฤแปƒ ฤi built Vietnamโ€™s first independent wh**ky distillery there.

Their corn wh**ky begins with an heirloom variety grown in the northern highlands and is aged through those changing seasons. The result is honeyed and creamy, with notes of palm sugar and toasted oak.

It forms the base of Vแป ฤแปƒ ฤiโ€™s Old Fashioned. At The Hill Station, the finished cocktail is poured over one large cube of ice and garnished with dried orange. Nothing more needed.

After months of summer heat, warm light still falls across the old walls, but the rain is returning and gentler days are settling over Hแป™i An. The walls stay cooler, and softer air finds its way through the shutters.

Not quite Sa Pa weather, of course, but enough to remind us of the origin of The Hill Station.

Old walls gave way to open skies, and the usual pace of service was replaced by games, long meals, and time by the sea.

The Hill Station team joined colleagues from across Lim Hospitality Group for two days away from our everyday roles. There were team challenges, conversations beyond the usual working day, and new memories made together - with Sum Vแบงy joining the annual trip for the first time.

Now the sea is behind us, and its familiar rhythm has resumed.
