It’s a unique dish—a Japanese invention that puts a creative spin on Chinese cuisine. While it can be enjoyed at Chinese restaurants across Japan, it does not exist in China. It consists of an omelet containing ingredients like imitation crab and wood ear mushrooms served over rice, all topped with a special thickened sauce that strikes an exquisite balance between sweetness and savory flavor. yet it’s a dish I sometimes get an irresistible craving for. I might be biased since I make it myself, but it really is delicious.
