NEW BANH MI STORY BANH MI MOI Anan Saigon Chef Peter Cuong Franklin had long dreamed of opening a banh mi stall in Saigon. So when he expanded the space next to Anan Saigon, he took the opportunity to set up an outdoor cart serving takeaway banh mi alongside fresh Vietnamese coffee in front of the restaurant.
Bánh Mì Mới is a new gourmet Vietnamese takeaway sandwich concept opened in July 2026 in Ho Chi Minh City by Michelin-starred ĂNĂN Saigon chef Peter Cường Franklin. It elevates traditional street-food baguettes using modern techniques and premium ingredients such as grilled Wagyu beef short ribs, duck liver pâté, Tuong Ot chili sauce, Hanoi style fish cake, and house-made cha lua mortadella sausage.
Bánh Mì Mới created by Michelin-starred chef Peter Cường Franklin in Ho Chi Minh City costs VND160,000 - 200,000 (US$6-8), reflecting the premium ingredients and quality of the sandwich.
Bánh Mì Mới high quality ingredients are meticulously prepared and stored in refrigeration using the same techniques and hygiene standards as Michelin Star Ănăn Saigon.
Chef Peter Cường uses Hanoi style bread for its resemblance to French baguette, smaller, denser on the inside, and more flavorful than the typical Saigon banh mi. These sandwiches are packed with premium ingredients and look more like a Japanese-style katsu sando, smaller in size than a street style Banh Mi, reflecting the chef philosophy of quality over quantity.
No one blinks an eye at a 10 dollar burger. But people are skeptical and shocked at a 8 dollar Banh Mi. Chef Peter Cường believes that Vietnamese Banh Mi deserves more respect and should be priced accordingly. He will continue pursuing his goal of elevating familiar Vietnamese dishes such as Banh Mi to the higher-end segment while preserving their authentic identity
