Maqluba (meaning “upside down”) is a traditional Palestinian dish known for both its flavor and its dramatic presentation. It’s made by layering rice, vegetables (like eggplant, cauliflower, or potatoes), and meat (usually chicken or lamb) in a pot, then cooking everything together.

When it’s ready, the pot is flipped upside down onto a serving plate—revealing a beautifully stacked dish. Maqluba is especially popular for family gatherings and celebrations, and it reflects the warmth and hospitality of Palestinian culture.
