Là một người con lai Pháp - Việt tôi được lớn lên với món ăn Việt từ gia đình, từ mẹ và được học món ăn Pháp từ trường, từ những người thầy ở nơi tôi sinh ra và lớn lên - Paris.
Khi sắp bước vào tuổi 36 với hai nhà hàng Việt tại Hà Nội, tôi quyết định tiếp tục dành thời gian học tập và khám phá ẩm thực Pháp tại trường ECOLE DUCASSE by Alain Ducasse. Tôi đang có nhiều kế hoạch cho các món mới của mình, các món ăn hoà quyện giữa hai nền văn hoá ẩm thực Pháp - Việt. Hẹn gặp các bạn tại Chào Bạn và Maison 1929 thật sớm.

As a French-Vietnamese, I grew up with Vietnamese cuisine at home, learning its flavours and traditions from my family and my mother. At the same time, I was introduced to French cuisine at school and by the teachers and mentors in the city where I was born and raised — Paris.
As I approach 36, with two Vietnamese restaurants in Hanoi, I have decided to continue learning and exploring French cuisine by returning to school at ECOLE DUCASSE by Ducasse Paris
I already have many ideas and plans for new dishes — creations that bring together the flavours, techniques, and spirit of two cultures that have shaped me: French and Vietnamese.
