Chef doesn't say "post this" very often.
This time he did. Tiền Giang pigeon, sweet potato fried, spinach just wilted.

On the board this week (maybe next week too)

In 2016, a devastating frost gave Pierre-Henri Rougeot the excuse to change everything.

That year, the family domaine — rooted in Meursault for more than seven generations — lost most of its crop. Pierre-Henri used the moment to rethink the estate: fewer compromises, longer élevage, organic farming, indigenous yeasts, less sulphur. A quieter, more precise way of making Meursault.
He had returned to the family domaine in 2010 after spending time at Domaine de Montille and travelling through France, where encounters with growers — especially in the Loire — had shown him another way: do the work in the vineyard, then interfere as little as possible.
Sous la Velle is a beautiful example of where that philosophy led.
The vineyard sits just below the village of Meursault, on clay and limestone, with Chardonnay vines around 50–55 years old. The 2022 was whole-bunch pressed, fermented with indigenous yeasts and aged for 18 months in barrel, with only 15% new oak and no bâtonnage.
It has the generosity and texture you want from Meursault, but with a freshness that keeps everything alive.
If your idea of Meursault is butter and oak, this is a very good bottle to change your mind.

Timo Mayer has never really done things the obvious way.
He grew up in Germany, in a family that has been making w**e for generations. But instead of staying, he packed his bags, travelled, fell in love with Australia, and eventually settled in the Yarra Valley.

An hour outside Melbourne, the landscape changes completely. The roads become quieter, eucalyptus trees line the hills, and cool mornings give the vineyards a freshness that has made the Yarra Valley one of Australia’s great homes for Chardonnay.

Over the years, Mayer has become one of those names people quietly pass around when talking about the Yarra. Small production, minimal intervention, and w**es that speak quietly, but leave a lasting impression.

The 2024 Chardonnay comes from Hans and Anna Orth’s vineyard in Coldstream. Fermented in seasoned oak hogsheads before spending a short time in stainless steel, it’s made with a light touch, allowing the vineyard to do most of the talking.

It’s exactly the kind of bottle we love discovering.
Honest, vibrant, and deeply connected to the place it comes from.

Mayer, Chardonnay 2024, Yarra Valley.
