I make cheese in Da Nang exactly as I did in France many years ago . If you like french cheeses Saint Marcellin or Sain Felicien you will love my cheese. The price is 60 000 VND for one cheese ( around 100 g)

Yesss, our cottage cheese is different.

The reason is simple ... We stick to our traditional french process .😉
Our fromage blanc is made through slow fermentation using lactic ferments ( btw classified as probiotics). We don't use any acid like vinegar, lemon or citric acid to curdle the milk, only vegetal rennet and ferments .
This is a slow process ( fermentation & coagulation 24 hours , draining 8 hours ) resulting in a softer texture . Because we don't use acid we don't need to rinse our cheese , which preserves the milk flavor.

Our kefir may look like that after 1 or 2 days in your fridge .
Something wrong ? What do you think ?
It actually means that our kefir is perfectly fermented , so the whey is separating .
Just shake the bottle and it will turn homogeneous .
To see it from an other angle we are on the way to cheese . If someone is interested to make a ( very ) small kefir cheese from a bottle of kefir tell me in comment , I will post some pictures . You will not have the right temperature for that but still worth experimenting...🙂
