Cooking practice:
Okra stew, baked chicken, spinach and a Heineken to wash it all down 😅, (we love Heineken, malt and Guinness in African homes) I haven't cooked with my mom in forever and I definitely didn't pay this much attention before. My mom is already trying to make me work too hard, 3-4 dishes a day.😂 (Sorry mom, your son is still lazy.)
Opening Grio Da Nang has reminded me of how important it is to pass our culture and food history on to the next generation, even during the age of GrubHub, Grab and 饿了吗.
As a boy I avoided Okra dishes like the plague, I found it slimy but now I enjoy the texture and I also love it fried.
Culture note: Of all the native food crops in Africa, okra is one of the most prolific, spread far and wide across the continent.
Okra is eaten as a vegetable across most of West Africa and Southern Africa, and it's most prolific use is in soups and sauces where its mucilaginous properties lends a slimy texture to the soup.
