Step by step:
Water temperature: 70–75°C (158–167°F) – lower than you think! Too hot = bitter.
Tea amount: 4–5g per 150ml (about 1.5 tablespoons)
First steep (rinse): Pour hot water, swirl, discard immediately. Wakes up the leaves.
Second steep (drink): 20 seconds.
Subsequent steeps: Add 5–10 seconds each time.

You take a sip. At first, a light bitterness or astringency. Then, 5 seconds later, sweetness rises from your throat.
Why?
Here’s the simple science:
Tannins in tea cause the initial drying sensation on your tongue.
Theanine (an amino acid) and sugars are also present in the leaf.

This Shan Tuyết tree is estimated to be over 300 years old. Look at the trunk – covered in moss, lichen, and stories.
