We’ve been longtime fans of Commonwealth, so we’re incredibly excited to finally share that we’ll be roasting coffee for them!

Our connection to Commonwealth goes back even further than our admiration for the team and their work. One of Hyperion’s founders was part of the Commonwealth team in the early days of Hyperion, creating a longstanding relationship between our two companies that has continued to grow over the years.

We’ve admired the Commonwealth team for a long time. Their commitment to exceptional coffee, genuine hospitality, and thoughtful service aligns closely with the values that guide everything we do.

As they focus on the next chapter of their business, we’re proud to help continue the coffee program they’ve built over the past 15 years.

El Vergel is an innovative Colombian coffee farm founded by the Bayter family in 2006 after shifting away from avocado farming. The estate is widely recognized for its experimental processing techniques, such as anaerobic fermentation, and its commitment to the local community.

The farm’s flagship offering is the “Guava Banana” microlot, which features 40,000 Red and Yellow Caturra trees planted between 2016 and 2018. This specific lot undergoes a precise 48 to 60-hour anaerobic fermentation and a 45-day stabilization process. The resulting coffee is highly consistent and complex, delivering a juicy, tropical flavor profile defined by notes of guava, lychee, cherry, and citrus.
