Come travel with me through Western Europe with Keya's Kitchen ✈️🇪🇺❤️

So far we traveled through France, Spain & Portugal, the Netherlands, Belgium & Germany, and Northern & Central Italy… but this week our next stop is Southern Italy 🇮🇹✨

Picture it… Sicily, 1700s.
Caponata becoming popular across Sicilian homes — sweet, tangy, savory, rich, and packed with bold Mediterranean flavor.

My Sicilian-inspired Caponata layers tender eggplant, olives, celery, peppers, capers, herbs, and olive oil over crispy toasted bread finished with parmesan on top. Southern Italian cooking is all about taking humble ingredients and turning them into something unforgettable. Sophia Petrillo would definitely approve of my caponata 😂🇮🇹

Then we have Gamberoni Calabrese 🍤🔥
Colossal shrimp simmered in a buttery garlic sauce with lemon, parsley, olive oil, and spicy Calabrian peppers — inspired by the bold coastal flavors Southern Italy is known for. Calabria is famous for its chilies, seafood, citrus, and rustic dishes that bring heat and depth without needing anything overly fancy.

And of course Pasta Mollicata 🤌🏽🍝
Southern Italy is known for pasta dishes focused on garlic, olive oil, cured meats, breadcrumbs, cheese, and slow-developed flavor instead of heavy cream sauces. Crispy pancetta, parmesan, herbs, toasted breadcrumbs, and silky pasta always feel like comfort on a plate.

One thing about Southern Italy… the food always feels like family, tradition, and Sunday dinner near the sea ❤️

Now the question is… where should our next stop be on the Western Europe edition? 👀✈️

While most moms got to relax this Mother’s Day weekend, this mama was outside hustling — and honestly, I’m grateful for it. 💛

I want to give a huge thank you to Luanne Washington for hiring Keya’s Kitchen to cater her beautiful 60th Birthday party. It was such a pleasure finally meeting someone who has supported and loved my food for so long. Moments like that remind me why I keep pushing.

Big shoutout to my girl Nancy Green as well for recommending me. Word of mouth, love, and support like that never goes unnoticed. 🫶🏽

And thank you to everybody who came out to the Hastings-on-Hudson Flea Market yesterday! The event turned out amazing, and I truly appreciate every person who stopped by my table, purchased something, shared a kind word, or simply supported my business.

Some moms rest… and some moms grind. And that’s okay too. This journey hasn’t been easy, but I’m thankful for every opportunity, every customer, every event, and every blessing that continues to come my way. ❤️

Tonight’s plate: Ragù alla Bolognese over creamy polenta.
Ragù alla Bolognese comes from Bologna, in Italy’s Emilia-Romagna region. It’s not just “meat sauce” — it’s a slow-cooked, rich, meaty ragù built with mirepoix, wine, milk, tomatoes, and patience. Polenta has deep roots in Northern Italian cooking, especially in the colder regions where cornmeal became a comforting staple served soft and creamy or cooled and grilled.
This dish is warm, rustic, and hearty in the best way — creamy Parmesan polenta topped with a thick, slow-simmered Bolognese-style ragù that’s savory, tender, and full of depth. Simple ingredients, slow cooking, big flavor.

When your clients are German and Belgian, you take them on a little food tour back to their culture. 🇩🇪🇧🇪

Tonight, Keya's Kitchen served Schweineschnitzel, braised red cabbage, and bratwurst with wortelstoemp — comfort food with flavor, history, and heart.

Schweineschnitzel — pronounced SHVY-nuh-shnit-sel — simply means pork schnitzel. Pork tenderloin, pounded thin, well-seasoned, coated in homemade seasoned panko breadcrumbs, then fried golden and crispy. Served with fresh lemon because that bright little squeeze brings the whole plate to life.

On the side: braised red cabbage with green apples and raisins. Sweet, tangy, glossy, and cozy — the kind of side that balances that crispy pork perfectly.

And the bratwurst with wortelstoemp? Pure comfort. Wortelstoemp — pronounced WOR-tel-stoomp — means carrot stoemp, a Belgian-style mashed potato and carrot dish. Creamy, buttery, rustic, and finished with honey-thyme roasted carrots for a little sweetness and texture.

Piri Piri Chicken has roots in Portuguese and African culinary history. The word piri piri refers to the small hot chile pepper that Portuguese explorers encountered in Africa after peppers from the Americas spread through global trade. Portuguese colonizers and traders, especially in places like Mozambique and Angola, helped shape the spicy sauce and cooking style that became known as piri piri. Over time, the dish became closely tied to Portuguese cuisine, especially grilled or roasted chicken marinated in a bold mix of chile, garlic, acid, oil, and spices. At Keya’s Kitchen, it comes out juicy and full of bold flavor, with smoky char, deep seasoning, and that fiery garlicky kick that lingers in the best way.

Spanish Tortilla, also called Tortilla Española or Tortilla de Patatas, is one of Spain’s most classic comfort dishes. It is made with eggs, potatoes, and onion, though some versions leave the onion out. It became popular because it was simple, filling, and made from humble ingredients that were easy to keep in the house. Over time it became a major part of Spanish home cooking and tapas culture, served warm, room temperature, or even cold. It may look simple, but in Spain it is one of those dishes people take seriously because texture, thickness, and doneness matter a lot. Come travel with me to Portugal 🇵🇹 with this comforting classic from the Minho region, Caldo Verde by Keya's Kitchen.

Caldo Verde is one of Portugal’s most beloved soups, known for its humble roots and rich cultural history. It began as a simple countryside dish made from what families had growing in their gardens and kept in the kitchen, with Yukon or yellow potatoes, kale, olive oil, and longaniza sausage. Over time, it became a true staple of Portuguese comfort food and is still enjoyed during family gatherings, celebrations, and everyday meals.

My version stays true to that cozy, rustic spirit with homegrown kale, Yukon and yellow potatoes, garlic, onion, and a combination of longaniza and Spanish chorizo simmered in a rich golden broth. And yes, Spanish chorizo is completely different from Mexican chorizo. Spanish chorizo is cured, smoky, and firm, while Mexican chorizo is usually raw, softer, and seasoned very differently. In this bowl, that blend of longaniza and Spanish chorizo gives the soup a deep savory flavor with smoky richness in every spoonful. The potatoes make it hearty and silky, the kale brings that deep earthy flavor, and the broth ties it all together into something warm, soulful, and full of comfort.

French cuisine is more than just eating. It treats dining as an art, with taste, appreciation, and care in every plate. And here at Keya’s Kitchen, cooking and eating are both treated as something special, not just something you do to get full. 🇫🇷✨
Rooted in the rustic cooking of Provence, Ratatouille is a classic French vegetable dish made with eggplant, zucchini, squash, peppers, onions, tomato, and herbs, all slowly cooked down until rich, soft, and full of depth. I paired mine with creamy polenta for a smooth, comforting finish.

Chicken fricassée is another French classic, known for tender chicken gently cooked and finished in a velvety cream sauce. Served with garlic butter pommes purée and charred broccoli, this plate brought richness, warmth, and that balance of comfort and elegance that makes French cuisine so special.
