Ramp Season! Featuring in our seasonal pasta while the season lasts (likely two more weeks).

What are they? Ramps are a wild edible plant known for their garlicky flavor, with broad leaves and a bulb, native to our local woodlands. They are a highly sought-after spring delicacy, used in dishes like pesto, soups, and sautés, but are vulnerable to overharvesting, making sustainable foraging crucial, often by taking only one per plant. Ramps grow slowly, taking years to establish, and are identified by their strong onion/garlic smell and white flowers that appear in summer after the leaves die back.

This Easter weekend, we are serving lamb chops from Herd Heritage, a sibling-run farm in Dalton, Ohio🌷🐑

Read a little about the family’s view on farming below and watch for a sneak preview of our Easter special tomorrow (April 2).

Herd Heritage began with a simple belief: the way food is raised matters.

Siblings, Jeremy Wenger and Olivia Macklin set out to build something shaped by family, hard work, and a respect for the land and animals. We raise everything on pasture, working with the rhythms of nature and focusing on leaving the soil better than we found it. It means more to us than just producing good food...It’s about creating something we’re proud to put our name on and people can trust. We’re grateful to partner with restaurants that value that same connection, and to be a small part of the meals they serve.

How can a farm-to-table restaurant in Ohio serve salmon? Well….it has nothing to do with a farm - which is exactly why we LOVE it. We were fortunate to meet Rhett Hofacre when he walked into our restaurant with a gorgeous salmon fillet for us to sample. He’d recently shipped his seasonal harvest across the continent from Bristol Bay, Alaska where he and his three-person crew had fished the salmon from his small fishing boat. Read a little bit of Rhett’s story below!

Anchors Up is a small business inspired by passion and built to serve. Hi, my name is Rhett Hofacre, I own a small fishing boat in Bristol Bay Alaska. I began fishing as a deck hand soon after graduating from Waynedale high school. You might be wondering how a farm kid from Dalton Ohio made his way into the fishing industry? Well, that’s a story for another time, but by the grace of God I did, and as I worked through many different fisheries, I developed a passion for sharing seafood!
I was discouraged when I saw seafood in traditional grocery stores, inflated prices, questionable quality, and zero representation was all that accompanied the “Wild Alaskan” label. I wanted customers to get the real experience, so I committed to finding a better way. In 2024 I set out to offer an awesome product, a competitive price, traceability, and insight to an industry that is foreign to Northeast Ohio! I’ve always been a hands on blue collar guy, and I think that makes me perfect for the job. I still have a lot to learn about running a business, but I’m so excited for the future. I know that Anchors Up has great things to offer northeast Ohio!
