Imagine looking at some hyper group of goats and thinking, "I'll have what they're having."

According to legend, that's exactly what a goat herder in modern-day Ethiopia was thinking when he discovered the coffee cherries they were munching on. With some help from friends at the local Monastery, the goat herder used them to make a drink that helped them stay awake through long evening prayers.

And that's how coffee came to be, or at least it's our best guess.

Today, I want to focus on The Yirgacheffe: a lightly roasted, single-origin, Ethiopian coffee that is drastically underrated. It's floral and citric, with a pleasantly sweet taste to it.

The Yirgacheffe is comparable to other exotic and high-quality coffees, such as Hawaiian Kona and Jamaican Blue Mountain.

The Java is one of my favorite coffees that we roast. It's roasted dark, but not too dark! There's this deep smoky flavor, but it still retains a bit of the smooth underlying floral notes.

But this blend was actually roasted for coffee AND espresso! That's why the beans have a matte finish with very few surface oils (compared to many traditional dark roast). The lack of oils makes these beans perfect for your automatic espresso machine.

Ever wonder why Javaté coffee tastes so much better than its competition? It's because we ship our coffee right after we roast it. We want our customers in control of their coffee's quality.

After a few months, coffee tends to oxidize and get stale. It also loses some of its fun and unique flavors and aromas. (In fact, most people don't know that these flavors and aromas exist, since their usual coffee is weeks or months old before they even purchase it.)

Our goal is to introduce people to the crazy benefits of fresh coffee. We shouldn't just drink coffee, we should enjoy it! And you need to experience fresh coffee to really experience it.

It takes a few days for freshly-roasted coffee to really develop these flavors, and I talk about this a bit more in our newest blog post! Give it a read and let me know what you think. Cheers!
