🥭🥭Gonna love this. Roast chicken, peppers, and onions in a savory garlic-ginger marinade until cooked through, then stir in fresh mango at the very end so it warms gently without turning mushy. The sweetness of the mango balances the salty marinade and gives the dish a bright finish — basically, it's a party on a pan and everyone's invited.

Ingredients
• 1/3 cup Canary Island Garlic Herb Olive Oil
• 1/3 cup reduced-sodium soy sauce
• 1 tablespoon brown sugar or 3 tablespoons maple (sounds healthy already!)
• 4 garlic cloves, grated (or more — we don't judge)
• 2 teaspoons grated fresh ginger
• 1 teaspoon dry mustard
• 1/2 teaspoon red pepper flakes (or more if ya love that zipppp)
• 1 large red bell pepper
• 1 large yellow bell pepper
• 1 large red onion (or sweet onion)
• 1 1/2 pounds boneless, skinless chicken breasts or thighs
• 4 cups fresh mango chunks (the hero of our story)
Mango Mama Method
Whisk together the marinade, toss with the chicken and vegetables in a bowl and stir around to coat that goodness, and roast on a sheet pan until cooked through. Stir in the mango right before serving — not a minute earlier. The mango is a diva. Respect her entrance.
Directions
Heat oven to 400°F.
Whisk together the olive oil Splash, soy sauce, brown sugar or maple, garlic, ginger, mustard, and red pepper flakes.
Toss the chicken, peppers, and onion with the marinade.
Spread on a parchment-lined sheet pan. (cuz ain't nobody like scrubbing sheet pans!)
Bake for 20–25 minutes, or until the chicken is cooked through and the vegetables are tender.
Put in serving bowl and stir in the mango just before serving so it warms gently and keeps its shape.
Easy serving suggestion:
Serve it on top of a big salad, now your one sheet recipe is a one plate meal and you don't need to seperate your salad from your super!

(And it's a bribe for those who hate salads!) As one of our customers told us before we retired from the restaurant, she said...
"I been cooking for my husband for 40 years and I never got him to eat a salad! What did you do to your salad? He almost ate through the plate!"
Let us know how it turns out!
