Tijuana Caesar- the misconception that this salad is Italian is almost universal. The Caesar salad was invented by a Mexican national in his home town of Tijuana. Here at Que Rico we build a base of lime juice, roasted poblanos, cotija cheese, raw & roasted garlic, and colatura(Mediterranean fish sauce) and emulsify the dressing with roasted garlic oil and extra virgin olive oil. We dress freshly cut romaine lettuce with our Tijuana Caesar, more cotija, toasted pepitas & sesame & puffed hominy. It gets garnished with fresh cilantro. Pro tip- add chicharrones, it slaps.
