Happy Friday friends! Paccheri Alla Genovese returns just in time for Fall. This is a traditional beef & onion ragu that has been simmering for 12 hours, which we toss with Italian imported Paccheri pasta & a k**b of butter, and finished with Parmesan & pickled carrots. 😍

Gavin also made Ube Tres Leches this week, along with dark chocolate cheesecake. We also have a good amount of Albuquerque Chili Dogs!

Gavin’s back at it, making weiners from scratch! He sought some advice from our friend Kyle over at Black & Sons Butcher Co. regarding efficiency and we wound up with a new stuffer that also improved the grind as well. Thanks Kyle!!

Presenting the Albuquerque Chili Dog! The filling features Hatch chilies shipped from the Motherland herself as well as Monterey cheese, and we are topping them “Frito Pie” style, with crema, Heirloom pico, and Fritos! As you can see, my sister may have enjoyed it a little too much. 🤣
