Meet Dylan! 👋🏼 Dylan is one of those people that possesses grit. He is the cafe manager at our Northwestern location and loves coffee and being in community. He is a man of service. He recently became part of the roasting team and it’s been so amazing to see him step into different roles within the team. He is certified by the Specialty Coffee Association in roasting, green coffee & currently working on a Brewing certification.

Favorite Drink: Cold brew (single origins are the best!)

Favorite Hobbie: Hiking, TTRPGs, boardgames, general silly antics

I’ve been working in the industry for 6 years now and have loved seeing coffee used as a tool for connection! While it’s so much fun to analyze and appreciate the complexity each cup and origin has to offer, it’s a gift to see how it unifies and brings people to dwell together; it’s a blessing to see it used to foster good community both crossed and behind the bar.

Meet Jennie. Our spunky and funny barista. She’s been in coffee for almost 5 years and is very passionate about coffee and the ethics around it. Jennie works at both Evanston and our Northwestern location and is a support role at both cafes! She is a team player and has the best shoes! When she’s not pouring latte art, she is down at the city doing improv!

Favorite drink: drip coffee
Favorite hobby: writing, drawing, tabletop gaming!

Coffee is such a deceptively simple thing - in the West, we largely think of it as fuel, as something to consume and dispose of, not something worth time and effort to get to know better. but the truth is, every cup of coffee we consume takes hundreds of hours of real, human labor to produce! and most of the time, that labor is matched with just as much exploitation, with farmers getting paid pennies by large corporations who then sell their product for much more than they paid for it. i see it as my responsibility to respect their time and labor by respecting the coffee i make. we owe it to them to find excellence in every cup. and if i can make even one person think more deeply about where their coffee came from and what it took to get it in that mug, i’d call that a job well done! coffee is diverse and mysterious, and can always tell a story about the humans who make it possible.

Meet Valeria! Valeria came into the reprise family this year and carved her way into more and more responsibilities. She is the embodiment of gratitude. She constantly asks for more knowledge. We are so happy and proud that’s she’s Evanstons Cafe Manager AND Leads our online coffee production. Valeria is also certified through the Specialty Coffee Association in Professional Brewing and Barista and has other certificates in sensory and roasting!

At 15, I had no idea that discovering coffee would lead me to discover so much of myself. What started as curiosity slowly became my passion, my work, and a part of who I am.

To me, being a barista is more than creating a beautiful cup. It’s being the connection between the people who grow the coffee and the people who experience it, carrying its story from one pair of hands to another, while sharing a little piece of my own.

Coffee has taken me places, introduced me to incredible people, and taught me to grow, to learn, and to always strive to become better.

And after all these years, I’m still grateful to be part of its story.

Forest Floor 🍄🍁🌲: Young pine cones, burnt maple, pine nuts, cordycepts & lyons mane, lemon zest, sweet fern & spruce tips lay beneath a lemongrass coferment espresso.

Hello! We have a lot of new followers and want to do a series to introduce our Reprise Team.

Meet Axel. He is our Coffee Director! He wears many hats including coffee sourcing, roasting, cafe managerial tasks, training baristas and making sure our coffees are tasting their best! Axel is a certified instructor for the Specialty Coffee Association ☕️

We seriously cannot get enough of this Blueberry co-ferment. We’ve tried it as espresso, pourover, cortado and even made a wild blueberry macerated syrup to exaggerate the blueberry note for our seasonal wild blueberry cappuccino. It KILLS in all brewing methods.

This Purple Caturra variety is fermented for over 150 hours. Undergoing a highly controlled co-fermentation built around a hydromel-based culture designed to express berry-like character. The process begins with specific microorganisms, primarily Lactobacillus which is cultivated to fuel the coffees fermentation.

The result is a wild expression of blueberry essence, blueberry pie, fresh rose & blackberry

New Coffee Release -> Finca Deborah- Volcán, Chiriqui, Panama - Deep Purple, Red Bourbon ♥️

Expect notes of violet, black plum, pinot noir, blackberry & raspberry.

This release is exceptionally scarce & highly expressive. Finca Deborah only has 250 bourbon trees growing on the farm, making annual production of this esteemed variety incredibly low. Whole cherries undergo long, extended anaerobic natural fermentation - sealed in carbonic-style tanks starved of oxygen before slow drying, driving intense flavor development.

The results are dramatic, cohesive & soft. ☕️
