In the past we've done blueberry, strawberry, and mint lemonades. This year, we wanted to do something a little different.

Since our new menu is all about Endless Summer, we looked to one of the places that embodies summer year-round: Key West.

So instead of another lemonade, we made our House Key Limeade. Fresh key lime juice, simple syrup, purified water, and a pinch of sea salt to make the citrus pop.

New mimosa flavors are here with the Endless Summer menu.

This summer's mimosas are Watermelon, Lemonade, Piña Colada, and our Marg-Mosa.

A lot of people ask why our menu designs are so over the top.

For us, the menu is the first impression.

We want to immediately make a first impression that reflects how thoughtful, intentional, and creative the experience is going to be before the food even hits the table. Even the dish names are meant to carry personality and creativity, just like the dishes themselves.

We want the menu to feel like part of the experience. Something memorable. Something that sparks curiosity, starts a conversation, or even gets a little chuckle at the table.

At the end of the day, the goal has always been to create food and drinks that people remember—not just because of how they taste, but because of how they make them feel.

And it all starts with the menu.

“Caribbean Illusion” 🥭🥥☀️

One of our favorite dishes from last summer is back.

What looks like eggs is actually coconut, mango, and guava.

Our deconstructed tropical French toast is made with coconut pudding, mango purée “yolks,” guava gel pearls, cinnamon pineapple, and rum bread French toast. Served with Caribbean jerk bacon or Caribbean jerk avocado.

Also available gluten free by substituting our gluten free bread for the rum bread.

Nothing says summer quite like a fresh blueberry cobbler.

So we turned it into pancakes.

Our buttermilk pancakes are topped with warm blueberry compote, three scoops of vanilla whipped cream cheese, almond streusel, and powdered sugar.

“Why Did The Chicken Cross The Boardwalk?” 🍗☀️🌊

We wanted to do a boardwalk themed chicken and waffle.

We originally started off with a funnel cake base, but decided that was a little too on the nose for a brunch dish. We landed on a deep fried vanilla waffle instead.

We start with a fresh peach chutney, then top the waffle with crispy chicken tenders, our signature hot honey sauce, and a drizzle of peach fresno pepper sauce for a little sweet heat.

Feels like brunch on the boardwalk in the middle of summer.

“Heirloom Today, Harvest Tomorrow” 🥒🍅

We wanted to make a dish that felt like a southern beach picnic with ingredients straight from the garden.

Toasted sourdough with house pimento cheese spread, fresh heirloom tomatoes, pickled shallots, and basil. Served with a cucumber salad with herb dressing.

Endless Summer is back this Friday ☀️🌊

Our new summer menu is inspired by beach trips, boardwalk food, tropical flavors, coastal dinners, and all the little things that make summer feel like summer.

A few new dishes hitting the menu:

Capri Diem — a Mediterranean-inspired shrimp & grits with saffron grits, lemon caper beurre blanc, poached shrimp, zucchini, herb oil, and a poached egg.

Why Did The Chicken Cross The Boardwalk? — our summer chicken & waffles with deep fried waffles inspired by funnel cake, peach chutney, hot honey, and fresno pepper sauce.

Berry Me In Cobbler — blueberry cobbler inspired pancakes with blueberry compote, whipped vanilla cream cheese, and almond streusel.

Heirloom Today, Harvest Tomorrow — sourdough bread, heirloom tomato toast with pimento cheese, pickled shallots, herbs, and cucumber salad.

Caribbean Illusion is also coming back for the summer — our tropical deconstructed french toast with rum bread french toast, coconut pudding, mango, guava, cinnamon pineapple, and Caribbean jerk flavors.

The Maine Attraction — a New England style lobster roll Benedict with claw and knuckle lobster meat and lobster hollandaise.

We also added new summer mimosa flavors: Marg-Mosa, Piña Colada, Watermelon, and Lemonade 🍹

Thank you to everyone who came out for our third Eternal Summer Dinner Experience.

These dinners have been one of the most creatively fulfilling things we’ve ever done at Eternal Sunshine. Every event gives us a chance to keep refining the food, timing, music pairings, and overall flow of the evening little by little.

For those who haven’t heard about it yet, Eternal Summer is our immersive tasting dinner built around different memories and feelings of summer. Each course is paired with music and storytelling to create a more connected experience from start to finish.

Each dinner has only 20 seats available with one seating for the evening. This allows us to provide our guests with an optimal experience and maintain a smooth flow of service throughout the night.
