55 people, one kitchen, everything made from scratch. Nobody left hungry and nobody left early — that's all I ever want out of a night.

Thank you to everyone who came out. You made it what it was.

Fire One joins forces with Chef John John from (Grandmas Grotto)
Warrington's historic firehouse venue partners with the chef behind Grandma's Grotto to bring scratch cooking to the space, starting with a new Thursday tasting night
WARRINGTON, PA — Pete Walts, owner of Fire One, and Chef John Vincent, longtime owner of Grandma's Grotto in Horsham, have partnered to bring Vincent's cooking to Fire One, the restored 1934 firehouse on Maple Avenue.
“Fire One has a beautiful space, the ambience, and the history,” Vincent said. “I'm bringing the kitchen.”
Walts agrees the partnership made sense from the start. “John owns every plate that comes out of his kitchen. That's the kind of care I wanted for Fire One's in house food service and catering operation,” he said.
Restoring a piece of local history
Fire One is housed in the former Warrington Fire Company firehouse, built in 1934. The restoration focused on returning the building to its original character — preserving the brick walls and wood floors while updating the space with modern lighting, audio, and video. The original Warrington 1925 fire truck along with a curated museum collection of antique fire apparatus and memorabilia inside Fire One pays tribute to the volunteer firefighters of Bucks and Montgomery counties.
The building's four spaces can accommodate groups from 6 to 100 guests, making it a fit for anything from a small family dinner to a wedding reception. The same setting that works for a quiet gathering of friends and family can be arranged for a larger celebration — a rehearsal dinner, an anniversary, a milestone birthday — without losing the intimacy that makes the space distinct.
About Chef John Vincent
Vincent opened his first kitchen at 17 and has run his own restaurants ever since. Most recently, he owned Grandma's Grotto on Easton Road in Horsham, a neighborhood Italian restaurant known for maintaining a separate, fully gluten-free kitchen — a rarity when he started doing it, and something that built a loyal following among diners managing celiac disease and gluten sensitivities.
“People who can't eat gluten shouldn't have to sacrifice flavor, and they shouldn't have to feel anxious when they go out to eat,” Vincent has said.
Walts said that same attention to detail is what drew him to the partnership. “I wanted someone who'd bring the same level of care and quality to the food that's gone into the building restoration,” he said. “That's John.”
Thursday tasting nights
To introduce the new partnership, Walts and Vincent are planning to begin hosting Thursday-evening tasting nights at Fire One. Guests are invited to sit down and experience the food, the venue, and the hospitality much as they would at an event of their own.
“We want people to get a feel for what a celebration here is actually like,” Walts said.

I've been cooking for 40 + years, 22 of them as owner and chef at Grandma's Grotto. In all that time I never sent out a plate I wouldn't put in front of my own family, and that isn't changing at Fire One.
For my gluten-free guests: I handle you personally. Your food is prepped in a separate area with separate pans and separate utensils, and I bring it to your table myself so you're never working through a buffet line. If we have enough gluten-free guests Thursday, I'll set up a separate buffet just for you.
