For about the past month, we have been aware of a quality issue with our rice — specifically our sushi rice. We identified the cause, contacted our rice vendor, and decided to switch to a different rice vendor. We already made the change one week ago.

We sell our day-old sushi (sushi rice from the previous day) at 20% off. However, over the past month, the rice in these items was too dry, and honestly, it was not something I was proud to sell.

Now the rice quality has improved, and we believe our day-old items can be enjoyed and taste good. Even so, we will continue offering them at 20% off, because after a day, the flavor is simply not quite the same as freshly made.

We wanted to let you know that we have changed our rice.

To me, fancy food isn’t about using foie gras or filet mignon. It’s about knowing the people behind every single ingredient.

Especially when it comes to vegetables, I want to know every grower, the hard work they put in, the care they take in growing their produce, and the journey those vegetables make before they become part of a dish and eventually reach our customers’ plates.

Seeing all of that come together in the final dish—that’s what fancy means to me.
