But what’s the difference between Yellowfin and Bigeye?
Bigeye are caught in cold deep waters and have a high fat content. Compared to Yellowfin, Bigeye has a nice rich, buttery flavor which makes it the preferred fish for sashimi and the perfect fish for grilling since it won’t dry out as easy.
Our favorite ways to eat Bigeye:
1. Raw and thinly shaved, served with Japanese dressing and wasabi mayo
2. Sesame encrusted, lightly pan-seared or grilled rare, and then sliced (across the grain) as an appetizer
3. Pan-seared steaks medium rare, topped with homemade chili butter and your favorite sides
