The National Institute for Culinary and Hospitality Education (NICHE), managed by WSU Tech, is a multifaceted entity combining innovative curriculum with business operations to create synergistic learning outcomes for students and a highly skilled and passionate workforce that will not only benefit NICHE but Wichita itself. Our mission is to celebrate and enhance our culinary landscape and our fou

nding principles are sustainability, accessibility and innovation. NICHE houses the WSU Tech Culinary Arts program. Throughout their two-year associates program, our students receive over one thousand hours of culinary lab instruction (actual time in the kitchen). But in addition to this, all of our students have the opportunity to work in the Bistro, Food Hall, events and catering. The pressures and timing of a bustling kitchen or large-scale banquet are impossible to duplicate in a lab environment, which is why we consider this real-world experience to be essential in preparing them for the workforce. NICHE features an open to the public Food Hall as well as several rentable spaces throughout the facility including Henry's Place, the Event Center and Rooftop Terrace at NICHE.

Introducing… Chef Spotlight Dinner Series: Chef Brie: From Hearth to High Table

Inspired by the hearth fires, bustling markets, great halls, and royal feasts of the Middle Ages, Chef Brie is bringing centuries of culinary history to the table through an unforgettable five-course dining experience.

From humble early medieval preparations to the increasingly sophisticated flavors shaped by expanding trade routes, agriculture, religion, and social class, each course explores the ingredients and traditions that defined medieval food culture.

Now, Chef Brie invites guests to step beyond the modern dining room and experience an evening filled with history, storytelling, and exceptional fare.

Join us for a special evening as advanced culinary student Antonio Roman presents a thoughtfully curated 3-course menu as part of his final practicum.

Antonio’s menu brings an elevated interpretation of modern Latin cuisine to the NICHE Envision Innovation Kitchen, blending creativity, technical skill, and bold contemporary flavor.

Guests can expect a refined and imaginative dining experience featuring dishes such as duck mole and a creative interpretation of prickly pear “tuna” tartare, along with additional courses inspired by seasonal ingredients.

We invite you to experience the culmination of Antonio’s hard work, growing talent, and unique culinary voice.

Student Spotlight ✨🍽️

As part of her Practicum IV Full Circle Chef's Table Experience, Mikayla Maury challenged herself to step outside of her comfort zone by creating a modern French bistro menu featuring dishes she would not normally choose for herself.

Guests enjoyed a three-course menu featuring:

🥕 Ratatouille Galette with Sauce Vierge
🍷 Coq au Vin with Pomme Dauphine and Grilled Asparagus
🍓 Raspberry Crème Brûlée

By exploring new flavors and techniques, Mikayla pushed herself as a chef and successfully brought her vision to life.

Chef Keegan took guests on a culinary journey Saturday evening, sharing the stories, influences, and experiences that have shaped his path as a chef.

Each course reflected a different stop along the way, from Texas-style chips and salsa and Midwest-inspired ham & beans to Hawaiian-influenced tuna crudo and a Southern-style meat and three.

Guests finished the evening with a nostalgic cherry mash parfait inspired by the Carolinas.

Thank you to Chef Keegan, our talented NICHE team, and everyone who joined us for the evening.
