Speaking of ice cream, National Ice Cream Day is this Sunday.

Making one Dot Cake dessert was not enough.

The Dot Cake Cheesecake got so much attention that the cannoli demanded equal billing.

So now we have a Dot Cake Cannoli.

Birthday cake inspired cannoli cream, plenty of sprinkles, and all the fun of the trend packed into a crispy cannoli shell.

Was this necessary?

Probably not.

Are we glad we did it?

Absolutely.

Fun Fact Friday is taking the week off because four new cheesecakes just showed up and decided this post was about them.

Meet the new lineup:

🍑 Peach Cobbler
Peach-stuffed cheesecake topped with cinnamon streusel.
🎂 Dot Cake
Cake-flavored cheesecake with a sponge cake center, cream cheese icing, and enough sprinkles to make subtlety impossible.
🍒 Cherry Limeade
A bright lime cheesecake with cherry swirled throughout.
🥤 Root Beer Float
Root beer cheesecake topped with whipped cream and a cherry.... because we could 😊

Basically, summer showed up in cheesecake form and brought options.

My 15-year-old daughter Jenna asked if she could make the viral Dot Cake into a cheesecake.
I looked it up on TikTok.
Nope.

She asked again.
I said, "Fine, but make it for home."
So she did.

Then I saw it... and tasted it.
Which was annoying, because now she had evidence.

Her pitch to sell it at the shop was simple: people who can't have gluten watch food trends pass them by all the time, and you can't find a gluten-free Dot Cake anywhere.
That's a pretty solid argument.

So I did a little more research.
I found out the trend started with The Dotcakes Bakery in Roslyn, New York. ( https://thedotcakes.com/) That got my attention. XO is New York inspired. Our cheesecake is New York inspired. If New York starts a sprinkle-covered cake trend, we probably ought to take a look.
So we did.

Dot Cake Minis are in the case today: cake flavored cheesecake with a cake center, cream cheese icing, and a whole lot of dot sprinkles.
I guess the kid knew what she was talking about.

Happy 4th from XO. 🇺🇸

Today we’re grateful for 250 years of this country, the people who built it, the people who serve it, and the fact that USA is still alive in the World Cup.

That feels like a pretty solid reason to celebrate with dessert.

We’re open 12–5 today, then closing early so our crew can go blow stuff up at home instead of inside the shop.

🍓 It’s So Fluffy!! Float
Strawberry purée, marshmallow fluff, sprinkles, vanilla ice cream, Strawberry Crush, whipped cream, and a candy unicorn horn. It’s so fluffy we could cry.
🍌 Banananaa Shake
Vanilla ice cream, banana milk, frozen bananas, Nutella, whipped cream, and a name that gets worse the longer you say it.
