When you need to fire up the smoker to send some food with the kiddos to church camp, you might as well plan a big ole dinner and meats for the week, as well. Today, the big smoker held two briskets and two pork butts- one for us and one for camp on each, and for dinner tonight, two racks of ribs, one whole pork belly (if you know, you know- this is a favorite splurge), homemade bacon macaroni and cheese, “jacked up” hash brown casserole, cilantro pinto beans, deviled eggs and cabbage. Shout out to Hall’s Hives Texas for the honey on the ribs, too! It was amazing, and next year, you all can enjoy the local honey, too! Follow their page to see the work and the journey behind the local honey they will be offering. One last pro tip, smoke your scraps for your fur babies… they deserved smoked food, too! (Pictures of brisket and pork butt won’t be until they rest)
