While in Rome 🇮🇹 over Christmas I had the pleasure to eat at the most delicious Da Fortunata. I had one of the 4 Roman pasta dishes Amatriciana it was so rich in flavor with the combo of the pecorino and guanciale I knew that if I tried I could perfect Papi’s version and make it taste just like this Roman famous restaurant….
