While Big Swerve’s BBQ is temporarily closed through August 14, today we’re giving Swerve Nation a peek at something that happens long before your BBQ ever hits the plate:

Great BBQ doesn’t start when the meat goes into the smoker. It starts with preparation—selecting the right cuts, trimming them properly, building those layers of seasoning, getting the wood and fire right, and then having the patience to let time and smoke work their magic. 💨🍖
