Yesterday I walked into Victory Pig for the final auction before the building comes down. I didn’t go there pretending I grew up eating their pizza or that I had memories inside those walls. I didn’t. But standing there yesterday, listening to people tell their stories, watching people bid because they wanted a piece of something that meant so much to this area… I understood it a little more. I went hoping to get their pizza pans. I left with around 40.

To some people they probably just look like 40 old, beat up pans. To me, they’re 40 pieces of NEPA pizza history that aren’t going in the garbage, sitting on a shelf or disappearing to some other shop somewhere. They’re going back to work.

Yesterday and today soaking wet, sweating, covered in dish water, scrubbing every single one by hand. Years of buildup coming off. Burning them off one by one. My hands hurt, completely filthy covered in grease, and I loved every second of it because every pan I finished meant we were one step closer to MY BEEF TALLOW PIZZA!

Victory Pig had generations to build its name. Mike’s has only been here 7 months. I know the difference. I respect the difference. You don’t buy history at an auction, and you definitely don’t earn it overnight.

That’s also why I’m not going to put Victory Pig’s name on something and pretend their history is mine. It isn’t. Those memories belong to the family, the employees and every person who sat down and ate that pizza over the years. I just happened to be lucky enough to bring 40 of those pans home and give them another life.

I also want to thank everyone who showed up and bid yesterday. People were spending real money because they cared, and ultimately that helped the family. I met some incredible people, heard stories I probably never would’ve heard otherwise, and made a connection with someone that I have a feeling is going to mean a lot to what we’re building next.

I’ve been saying pizza is coming, and I know some of you are probably tired of hearing me say “soon.” 👀But I’m doing this slowly on purpose. I truly believe pizza can become bigger than chicken for us. If I rush it because I’m excited, I’ll ruin the exact thing I’m trying to build.

The dough has to be right. The sauce has to be right. The cheese has to be right. The bottom has to have that CRUNCH. And when somebody who has been eating pan fried pizza in NEPA for 30, 40 or 50 years takes that first bite, I want them to know we took this seriously.

40 authentic Victory Pig pans. Our Italian family dough recipe. Pan fried Sicilian in beef tallow. 7 month old restaurant learning from a piece of NEPA history that was here long before us. Maybe years from now somebody will look at one of these beat up pans and tell a story about the pizza that came out of it. That’s what gets me.

Yesterday they were being auctioned off from a restaurant that was closing its doors. Today they’re being scrubbed, burned off and prepared to make pizza again. Not everything old needs to disappear. Sometimes it just needs another set of hands. Pizza is coming FAST. 🍕 Tell me a story or your favorite memory you had here!!
