The moisture and aroma of the wood allows the crust to maintain its internal softness, as well as ensuring large bubbles inside the dough, and the typical aroma of cooked bread. ples. Our oven is unique because it is made exclusively by hand, from raw materials harvested in Naples. The oven weighs over 6000 pounds and burns between 900˚ and 1000˚ F at the dome, the temperature needed to perfectly bake Neapolitan Pizza in about 90 seconds. Neapolitan Pizzas are different in that the crust and toppings are perfectly balanced – not too heavy, not too light – and above all incredibly flavorful!
