Bread and butter pickle time!!! Couple different recipes. Wish I could ask the ones who passed it down why it was different. You can taste a flavor change in them. Families must have different traditions they followed.

It's going to be a busy day in the kitchen!! I sold out of candied jalapenos at one of my last vendor events so I am making more plus a batch of pineapple candied jalapenos.
Watermelon rind pickles, strawberry watermelon jam and more swedish and dill pickles.

Before and after canning pickled asparagus.
Preserving the harvest is really a blessing but there is a fine balance between when it is ready and when I am ready. There is no waiting for time when it's grown. I truly feel we have gone so far from what nature intended. We have forgotten the harvest and the valuable time in preserving it. It's not something to rush through and it's best spent with good company.
The asparagus and rhubarb are usually the first spring projects I work with and even though I am exhausted and coming off an overnight shift at my real.life job I had a good time just processing the old recipes, talking with Mom and reminiscing about how things used to be done.
If I had my way it would be much more often I'd find myself in the kitchen.
Today was rhubarb relish which is my absolute favorite, rhubarb salsa which my mom likes and the pickled asparagus. The asparagus has lemon, tarragon, onion, black pepper seed, mustard seed in a vinegar blend.

I'm trying to make more healthy options this year so keep an eye out for the low sugar jams, pickled veges with more herbs and honey and limited sugar. It's hard to work around state requirements affordably but I really hope to make it work.
