Our summer desserts carry a little bit of Cuba with them.

Pirulí, our pre dessert, comes from a childhood memory of those caramel sweets from Cuba, wonderfully intense and hard. We soften the memory here, keeping its spirit and bringing in the flavor of tamarind. A little freshness to help us make the bridge from savory to sweet.

Then comes Mango and Passion, our dessert. A staple of any tropical table, now paired with Tatianoff, that unforgettable Cuban cake. Familiar and new at the same time, as we bring the mango into the memory.

The mango season is coming to an end, and only a few days remain.

Some memories, like some seasons, are meant to be savored before they disappear.

Fall arrives quietly in South Florida.

The mornings begin to soften, the evenings linger a little longer, and across our farms, the season slowly begins to awaken. Vegetables make their long-awaited debut, while many of the fruits that carried us through the summer begin to fade into memory.

It is a beautiful moment of transition.

At Emelina, October brings the beginning of a new chapter at our counter, one guided by the changing landscape of Florida, by what the earth gives us, and by the seasons as they unfold.

What an honor to be recognized by the City of West Palm Beach and Mayor for this special proclamation.

We are deeply grateful for this gesture and, above all, for the warm welcome we have received from this beautiful city. Emelina was born from a love for food, heritage, and the stories that bring us together around a table, and it means so much to have that spirit recognized here in West Palm Beach.

Thank you, City of West Palm Beach, and thank you to the Mayor for this beautiful honor. We are so proud to be part of this community and look forward to continuing to share a little piece of our story with you.

There is a quiet beauty in this time of year.

Summer begins to soften, the last fruits reach their sweetest expression, and the fields pause before welcoming a new season. Soon, our farmers will begin preparing the soil once again, patiently awaiting the abundance that autumn will bring.

In our kitchen, this transition is never an ending. It is an invitation.

We preserve what is fleeting through fermentation, curing, and time, allowing the flavors of summer to linger well beyond their season. Every jar we fill today becomes a memory we can share months from now.

September is a moment between harvests, a reminder that every season leaves something behind before making room for the next.

What if we could have traveled?

Perhaps we would have discovered that some flavors we call distant were never really strangers.

Coconut trees have always been part of our island, as have ingredients like culantro and lemongrass. Flavors we often associate with other cultures, yet growing under the same Caribbean sun that shaped our own.

This dish is our interpretation of that possibility, a conversation between the flavors we inherited and the ones we may have discovered along the way.

There is something unmistakable about this time of year. The air grows warmer, the afternoons linger a little longer, and the season offers its sweetest gifts. Summer fruits arrive at their finest ripe, fragrant, and full of character guiding the flavors that will grace our counter in the weeks ahead.

Before the season begins in earnest, our team will be taking a brief pause from August 2nd through August 11th. A little time to rest, gather inspiration, and return with renewed energy.

We look forward to welcoming you back on August 12th, ready to celebrate another month of thoughtful cooking, generous hospitality, and the beauty of the season.
