Twelve years ago today, two kids with stars in their eyes opened a café… and somehow, that evolved into one hell of a bakery.
It’s been a Cinderella story from the beginning. We dove in headfirst with blind ambition and haven’t stopped running since.

If you look closely, you can still see where we began. There are whispers of it everywhere.

As the world around us has evolved, we’ve worked hard to retain the roots of who we are and where we came from. Along the way, we’ve had the incredible opportunity to become part of the framework of this unbelievable community.

I am humbled and grateful every single day for our family, our team, for all of you.

There are days when it feels like our industry is losing its identity. So we’ll continue to rage against the machine. We’ll play our music loud. We’ll have fun. We’ll learn your names. We’ll give hugs. We’ll encourage you to buy the cookie. We’ll sometimes spell words wrong. And we’ll keep inspiring you to have a delicious day.

Because at the end of it all, we get to be here.

It’s a privilege and an honor to be a part of your story.

Twelve years. Somehow, we’re just getting started. ❤️

To have that recognized with a MICHELIN Bib Gourmand for the second year in a row is something we’re incredibly grateful for. Doing things the right way every single day, with intention and care, is what matters most to us at aioli, and we’re so humbled that this comes through.

This recognition belongs to our entire team. Every early morning, every loaf, every service, every person behind the scenes who shows up and gives everything they have. Without them, none of this happens.

And to our community in West Palm Beach, thank you for supporting what we do and believing in the craft the same way we do. It means more than you know.

Also, for everyone asking about sourdough classes…our June 2nd and 3rd classes are live on the website now. We started doing these because sharing this craft with the community has become one of the most rewarding parts of all of this. Only a few tickets are left before they sell out again.
