"My voice sounds like goose farts in mud," he used to tell me when we were dating. But after a quarter century together, I think his voice and the sound of his strumming fingers is still one of the sweetest sounds on this earth.
I used to think playing music was about being exceptional...pursuing excellence and then demonstrating it.
This man has taught me that the quiet pursuit of music, the patient learning of a new ditty, the private humming of a tune, the practice of a chord transition before supper, the casual joining of voices and instruments beside the wood stove on a winter's night are really where the thrill of music lies...It's not about perfection, but just the moments that one can spend suspended in time and place with melody and each other.

My heart's been thumping with pride this week -Pride for being part of the small biz community, pride for my kid.

I know the pandemic has been hard on small businesses. One of the silver linings has been the network of support we've created for each other...Meeting for drinks to swap stories about successes & failures, challenging each other w/ ideas, helping make sense of each new mandate...looking for ways to support each other.

One of my favorite relationships has been w/Anthony & Vivian . They have 2 shops in NYC; one on the upper west side, the other in Harlem. Their "forever home" is just down the road from us here in West Fulton. When we wanted to start a cafe 6 years ago, they took us in hand, worked with us to build our coffee program, and even let us barter for our beans until we got to more solid ground.

Early in the game, Saoirse took an unexpected interest in what we were doing. Dialing in became a Sat. ritual for us, & she came to love tasting the espresso, evaluating all the flavor nuances for the perfect shot. Soon she was Empress of our Espresso bar, her head an encyclopedia of each regular customer's favorite drinks. Anthony and Vivian got to watch her grow in her passion.

Covid has led us to move our cafe to a seasonal business, giving us 3 months off in winter. Meanwhile, Plowshares coffee is in the thick of it, negotiating holding a business together in a Covid hot spot. Their hard-working employees need some time off, and they need to be ready if anyone gets sick.

And so, one more business collaboration has ensued. Plowshares invited Saoirse to come work with them this month to fill in for their labor needs, and up her coffee game.

So, she stuffed her pack w/ N-95s, and relocated temporarily to the Big Apple. As much as I miss my kid, I don't think I'll ever get tired of seeing that glowing smile on her face when we talk as she shares what she's learning; nor the self-confidence & joy that emanates from knowing she is needed, & knowing she can help.

Sure, money's tight again this winter. But dang, this is a rich experience for us all.

We only do this once or twice per year, so don't miss out!

This is SCHWEINSCHAXE (German pork hocks). A year ago I was on a video call with my two-year-old niece, Mila. My brother had just put a plate of these on the table, and she proceeded to tear into them, ripping at the cracklings and smearing the grease across her face and using her tiny fingers to tease the morsels of meat out from between the bones. I longed to do the same, and could NOT erase the memory from my mind.
So this past week, while cleaning out the freezers and doing the inventory, I noticed we had a LOT of fresh (unsmoked) pork hocks. I had to give it a try. I simmered the hocks with a quartered onion, some bay leaves and a small handful of peppercorns for two hours, til tender. I let them cool overnight (not necessary, but that worked better for our schedule). The next night I rubbed them down with salt and spices, then roasted them at 400 degrees in a cast iron skillet for 45 minutes on each side. And then we sat down at the table, pushed the silverware to the side, pushed back our sleeves and ripped and smeared and pulled and feasted 'til we were full. It was everything I'd hoped it would be.
Thank you, Mila, for the recipe tip!!!
