A little trip down memory lane…
Back when Square Bar first started serving food, everything was made the hard way, the right way.
In the late ‘40s, Joe and Mary DiFelice brought in Elizabeth Glasco, who quickly became the backbone of the kitchen. Together, they built it from scratch. Meatballs and sauce made fresh daily, burgers hand-formed and stacked, vegetables chopped by hand, and rolls delivered fresh every morning. Elizabeth helped shape the menu, from spaghetti and meatballs to cheesesteaks, roast beef sandwiches, and daily homemade soups.
As things grew, so did the work. Shrimp peeled by hand, crabcakes made from scratch (with Elizabeth keeping her recipe close), fries cut from whole potatoes, and full platters that kept people coming back. The lunch crowd poured in, families took home pots of spaghetti and meatballs, and the kitchen became the heart of Square Bar.
Long hours, hard work, and a whole lot of pride built what we have today.
