If your chicken🍗 skin comes out rubbery or just all around not crispy you got a couple choices.

#1. Add some baking soda to your rub. It changes the pH of the chicken skin and allows it to crisp up faster. No you can't taste baking soda. Use like a teaspoon.

#2. Make your fire hotter. 300° degrees won't cut it, unless you're right over the flame. Don't do that. Indirect at 400° thank me later. Happy cooking.
