The benne seed, a relative of sesame seeds has a dark but rich history. Smuggled to the Carolina islands by enslaved West Africans, the seeds were cultivated in hidden gardens and have since been a staple in lowcountry cuisine. Often the seeds or oil were used to flavor Carolina rice. While they're similar to their cousin, the sesame seed, they have a deeper, more bitter, coffee-like flavour.
In honor of our region, we'd like to reintroduce a constant staple we've had on the food truck since the beginning of of its creation:
The Knox Hot Honey Chicken Sandwich
It's got tahini ranch and house pickles
Like Korean fried chicken it's got a super thin crispy crust
The hot honey is a collab with featuring the LUDACRISP kolsch
We make our own creme fraiche which is a base for our ranch and cut with benne seed tahini
House pickles are a must. There's a million ways to make them, but we use ratioas a base because it slaps
