Ready for something a little different? Meet Grosbot-Barbara Brut 0 from Saint-Pourçain in central France.

Made from 100% Gamay using the traditional method and with zero dosage, this is sparkling wine with plenty of personality: bright citrus, raspberry and cranberry notes, lively acidity, fine bubbles and a beautifully dry finish.

A fascinating look at the changing world of wine retail from The New York Times - and one that got us thinking about how Cork has evolved over nearly 19 years.

From the beginning, we’ve believed that an independent wine shop should be about much more than selling bottles. It should be a place for discovery, education, conversation, relationships and community.

But believing in those things isn’t enough. As the wine world and our customers have changed, we’ve tried to evolve too.

We’ve expanded the ways we introduce people to wine, put more emphasis on experiences and education, continued to rethink what we offer both in the shop and at the bar, and looked for new ways to make Cork a place where people want to spend time - not simply a place where they come to make a purchase.

And that evolution is ongoing.

The article is a good reminder that independent wine businesses can't simply rely on the way things have always been done. We have to keep listening, experimenting and finding new ways to make the experience of discovering wine meaningful.

For us, that doesn't mean changing who Cork is. It means continuing to find better ways to live out the philosophy we've had since day one.

The bottle is important. But the reason someone chooses Cork can be much bigger than the bottle.

Xarmant Txakoli — Basque Country, Spain
A bright, lively expression of Basque Txakoli. Primarily Hondarrabi Zuri, with Petit Courbú, it offers green apple, peach, fresh herbs and floral notes, with vibrant acidity and a slight spritz that makes it especially refreshing. Think crisp, energetic and coastal.

Mar de Viñas Albariño — Rías Baixas, Spain
A classic Atlantic Spanish white built around Albariño's combination of ripe citrus and stone/tropical fruit with bright acidity and saline minerality. The wine is 100% Albariño and is fermented in stainless steel with time on fine lees.

Aphros Orange — Vinho Verde, Portugal
This is where the tasting takes a turn toward texture. Aphros' orange/skin-contact Loureiro is a very different interpretation of Vinho Verde—aromatic and citrus-driven but with the additional grip and savory complexity that comes from fermentation with the grape skins. The Phaunus bottling is made in amphora and associated with biodynamic farming.

Elías Mora Toro — Toro, Spain
The heavyweight of the Cork 14th flight. Made from Tinta de Toro, the local expression of Tempranillo, this is a dark-fruited, structured red with blackberry, violet, liquorice and spice, with oak adding additional depth depending on the bottling.

Louis Métaireau Muscadet — Loire, France
A classic seafood-friendly white: dry, lean and highly refreshing, with lemon/lime, green apple and pear alongside the characteristic mineral and saline qualities associated with Muscadet. Made from Melon de Bourgogne.

Pfeffingen Scheurebe — Pfalz, Germany
A wonderfully aromatic German grape that deserves more attention. Pfeffingen's dry Scheurebe emphasizes grapefruit and lime, backed by mineral character and a fuller, more expressive palate. It sits somewhere between the familiar freshness of Riesling and something more exotically aromatic.

Sabbia — Piemonte, Italy
This is the most textural and unconventional of the Cleveland Park trio. Demarie makes Sabbia from white grapes using extended skin maceration; it is associated with Arneis and develops an amber-gold appearance and savory, spicy character. It is a great example of how dramatically skin contact can change the personality of a white grape.

🇫🇷 Château Pradeaux Bandol Rosé — Provence, France
The serious one of the trio. Made around Mourvèdre and Cinsault, this is a fuller, more structured Provence rosé, with red fruit, citrus, floral notes and a savory/mineral edge. It's the kind of rosé that can move comfortably from aperitif to the dinner table.

🇪🇸 Viña Otano Garnacha Rosé — Rioja, Spain
Bright, fresh and juicy. Made from 100% Garnacha, with notes of watermelon, tangerine, red berries and citrus, balanced by lively acidity. A wonderfully easygoing choice for sipping, tapas or a sunny Wednesday evening.

🇮🇹 Le Fraghe Ròdon Bardolino Chiaretto — Veneto, Italy
The savory Italian twist. Expect wild berries, floral notes, herbs and spice, with juicy red fruit, crisp acidity and a subtle saline/mineral finish. Dry, refreshing and a little unexpected.
