Happy National French Fries Day!
Today we are celebrating one of the most loved comfort foods, french fries. French fries are commonly made with white potatoes, salted, and served with a dip like ketchup. We also enjoy sweet potato fries, and we prefer white potato fries when they are cut very thin like frites. We do not prefer steak fries.
We also use the cold start frying method when preparing fries. This technique uses half the oil, skips double frying, and still achieves crispy fries with deep potato flavor. It also minimizes mess and reduces oil splatter. In cold-start frying, we place a deep pot with 4 cups of canola oil and 3 Yukon Gold or sweet potatoes cut into fries over high heat. As the oil slowly heats, the potatoes cook through, then brown and crisp as the oil reaches a boil over 25 to 30 minutes. It requires less oil and little temperature monitoring. If there are concerns about fries coming out greasy using this method, that will not happen.
