Coffee Myth: Coffee needs to be tested for mold

Mold really isn’t an issue in speciality coffee at the quality tier we buy. We don't have a machine that tests for mold.

The coffee we buy goes through several layers of quality control before reaching us. It would take many oversights for a moldy coffee to be offered to us, and if it was we'd catch it.

When we evaluate coffee for purchase we do a physical and a sensory evaluation. We look at the physical attributes before looking at it again under a UV light. If any mold was detectable to the eye or perceivable in the cup we wouldn't buy the coffee. If mold somehow snuck past us in the physical evaluation, we'd taste it in the sensory.

We only buy coffee with a moisture content below 11% to further mitigates the risk.

Coffee is shipped in plastic-lined bags to protect it from getting wet in transit. If there was a leak, we would document it on delivery, reject it, and claim insurance.

To understand coffee varieties, let's compare coffee to another fruit—apples. Look at apple labels in the grocery store and you will see Gala, Granny Smith, Fuji, and Red Delicious, to name a few. Those are the names of different varieties. Each of those apples has a common “appleness” about them, but their colors, shapes, textures, and flavors are different. It is the difference in variety that produces these different experiences!

Coffee is similar. We buy dozens of coffee varieties from around the world. These different varieties contribute to the important distinctions in flavor notes for each offering. Like apples, different coffee varieties come in different shapes and sizes, and when brewed, they have noticeably different flavors and textures.

While variety may not tell you everything, it has a significant impact on coffee flavor and it might be something that can help you find your next favorite!

Even though latte art doesn’t taste like anything, it’s a wonderful demonstration of the care and effort baristas put into your drink. A carefully poured latte looks good and sets the expectation that it’s going to taste good—after all, you eat with your eyes first!

Let’s talk about milk! 🥛☕️

Ask a barista which drinks are most popular in their cafes and you’ll find that most of the drinks they serve are going to have some kind of dairy or daily alternative in them. It’s no wonder—milk and coffee taste great together! And in the hands of a skilled barista, milk texture and flavor can take coffee to a whole new level.

What’s happening when we’re steaming, and how do great baristas achieve such amazing results?

One thing people forget is that when you are steaming milk, you aren’t just warming up a paint to create a pretty picture on a cup, you’re also cooking food!

So even though latte art doesn’t taste like anything, it’s a wonderful demonstration of the care and effort the barista is putting into the drink. A carefully poured latte looks good and sets the expectation that it’s going to taste good—after all, you eat with your eyes first.
