JUNE GUEST ROASTER: Apiary Coffee Co. ☕️✨

This June, we’re delighted to bring local micro- roaster Apiary Coffee Co. to Doubles for the first time! Having enjoyed Preface’s presentation of Sebastian Ramirez’s coffees earlier this year, we jumped at the opportunity to snag Apiary’s selections while they still had them in stock. These two coffees are sister varieties (Pink Bourbon and Gesha), which offers us a unique opportunity to compare varietal difference while virtually all other variables remain in sync.

First up, we have a stunningly complex Pink Bourbon. Where many PBs sacrifice structure for the sake of a uniform depth of sweetness, this one is suprisingly floral and delicate. A sparkling, underripe berry tartness awakens the palate first but is followed by an elegant floral, tea like softness. Our cups were lively, and yet somehow also understated. Brewers can pull to a longer ratio to soften acidity if needed, but we love the contrast this single cup provides.

Next up, we have one of the most distinctive coffees we’ve tasted this year. Our first introduction to this coffee from Preface’s stint on our pour over menu was unforgettable because its fruit loops note was pinpoint accurate; as an educational tool this coffee was unmatched. Apiary’s presentation of this coffee is lighter and more subtle but perhaps more rewarding; fruit loopy, bergamont aromatics and sweetness dominate but open up into a satisfying herbacious finish. Where Preface’s presentation may have been more uniform, Apiary’s is more spacious and inviting.

NEW GUEST ROASTER!!! 🚨☕️

This May, we are incredibly excited to bring Charlotte, North Carolina’s to Doubles for the first time! In an extremely competitive market that is quickly becoming a quiet coffee capital in the US, Hex stands apart with delightfully clean & expressive offerings, expertly roasted lighter than most!

Every month we feature two coffees from our guest roaster for the Doubles Coffee Club (visit the link in our bio to join ❤️)! The coffees will also be featured as part of our brew bar so you can enjoy them in the shop!

First up, we have a hugely vibrant washed Chiroso from Hector Lopez’s small El Susurro farm. This coffee is undeniably bright; tropical aromatics blend atop a deeply green-fruit base of flavors. Lime acidity and melon sweetness provide the cup’s structure to create what is easily one of the most complex coffees we’ve had in the coffee club! Acidity will be hard to tame but will also be your vanishing point for balance.

Second, we have what has quickly become one of our favorite coffees in some time l. This washed Criollo from Jose Gabriel Chamba’s world class La Inmaculada farm even surpasses the coffee we had of his from Hydrangea earlier this year. In a blind tasting, this coffee’s immediate expressiveness, depth of sweetness, and body would trick experienced palates into thinking it has to be a natural processed Ethiopia. That said, it’s highly convertible- a faster, conical brew will provide an exquisitely clear, structured cup.
