Each day, our bar and culinary teams turn the trim from the kitchen, fruits, herbs, vegetables, and spices, into a new infusion, slowly steeped with water and served to every guest as they settle in.

A refreshing first sip, a palate cleanser, and a small expression of what’s moving through the kitchen that day. ✨

A Provençal tradition interpreted through what we find at the market: a changing selection of seasonal vegetables and crudités, fleur d’ail frite, and to be served with tarragon aioli. 🌱✨

A wonderful way to spend a late summer morning. ☀️🪏

Our Lutèce team spent the morning volunteering with the Franciscan Monastery Garden Guild (Franciscan Monastery Garden Guild), a nonprofit tending 15 acres of monastery grounds, including a one-acre urban garden here in D.C.

From sowing seeds to harvesting, every part of the work is done by volunteers. Everything grown is donated through local organizations, churches, and ministries to neighbors experiencing food insecurity. Since 2014, that’s meant more than 100,000 pounds of fresh produce shared across the District.

Thank you for welcoming us into the garden, and for the care you bring to feeding our community. 💙

Charles Dufour, from the Côte des Bar.

Farming six hectares in Landreville, Dufour works organically and largely alone; as grower, w**emaker, and seller. In the cellar, indigenous yeasts, minimal sulphur, and a perpetual reserve stretching back to his father’s cellar shape Ch*****nes that speak clearly of the Aube and its Kimmeridgian soils.

His flagship, Bulles de Comptoir, has found its way onto some of the world’s most ambitious w**e lists, including as the house Ch*****ne at Noma.

At Lutèce, Charles Dufour is a regular on our list, championing the Aube’s Kimmeridgian chalk and proving grower Ch*****ne can be as expressive and terroir-focused as any grand cru. 🍷✨
