THIS, is a beautiful oyster! This is a Hurricane Harbor from Prince Edward Island. East Coast oysters tend to be a little smaller in size and briny, West Coasters are a little more plump and have a slight sweetness. When we travel, we seek out old tiki bars, but very rarely order a Mai Tai, because we truly believe Pam makes the best. We have tried, but they end being way too sweet and have no depth of flavor. Falernum was used back in the day in several tiki drinks. It’s the secret ingredient in Pam’s Mai Tai, and when I say secret, we don’t even know her recipe! 🍹

Today we are saddened to hear of the passing of one of the most Joyful guys we know. DJ made great contributions to our industry as a whole with his knowledge of restaurant work and passion for cooking. DJ worked every position at Noa, but he was best known for his work at our Sushi bar. Somehow this meat and potatoes guy that never tried his own sushi, created some of the best rolls for our guests. That was his passion. He knew flavors, and how they worked together. He didn’t have to try it, he knew it worked and he loved to make people happy by preparing food for them.
His unlimited amount of movie quotes, and jokes will be missed, and his laughter and his heart for us all will always be remembered!

Our Almond Walleye is not your typical Midwest fried fish. It’s Canadian Walleye, that is lightly breaded and fried, but it’s not greasy. It has a crispy exterior, light and flaky inside, and is so delicious dipped in our house made tartar. Every time we revamp our menu we skip over the Walleye, because we know if we change it or take it off, there just might be a riot!😆
