Nonna's Kitchen- Offering Cooking classes in Italian Cuisine

Offering an experience for small groups, providing the recipes and menus for traditional, regional Italian meals. Classes will be done in my home, in small groups, by a woman of Italian heritage who is a “home cook,” and has studied in Florence, Italy

Seasonal menus are selected including Antipasti, (appetizer) Primi Piatti, - (first

course – usually a fresh pasta course with a sauce of your selection) Secondi Piatti, - (main course – including a protein and contorni, or side dish) and finally, Dolci, (dessert)

Had a great day with four gals from Scales Mound area who were looking for a cooking class to begin their girls trip! Dagny found me by chance! We know each other now!!! 😊. Made Burrata bruschetta, (pictured), Mushroom risotto, Chicken Compagnia, Zucchini Galette, and Cioccolatissimo Cake! Fun day!! Thanks for coming!

What a wonderful day I had with Bryn and Lynn! They had reached out to book a class in 2023 when I was recovering from my heart surgery, and I was unable to cook with them until today! We had such a wonderful time making Deep Fried Veggies with Tomato Mayonnaise dipping sauce, Beef Ravioli, Chicken Marsala, Zucchini Galette, and Cioccolotissimo Cake. They gifted me a copy of their first children’s book, with a second to be out soon, and a third book planned! Such a fun day!

I have a group coming on the 23rd, one of whom is vegetarian. They have been very respectful of the entire menu to choose options that all can eat. The main course, will be Chicken Compagnia for their group, but I offered to try a main course that will be vegetarian for her. It involves eggplant halves that is hollowed, then stuffed with chopped eggplant onion, tomato, capers, mint, sliced black olives, breadcrumbs, and Parmesan. I will need to photograph when we make it! Thoughts? Does this sound appealing to you? I put it on the website as a choice, and we shall see! It may or may not stay following her reaction! 😂

Was happy to host the judges for the Jo Daviess County Fair as they took their dinner break!! I fixed Buratta Bruschetta (pictured in previous post,) sautéed summer vegetables, homemade pasta in Brown Butter Sage Sauce with Shrimp, and finally, for dessert, my Nonna Rose’s Sponge Cake with homemade Cherry Kijafa Gelato. Final props to Massbach Ridge Winery for a lovely white wine pairing of Seyval!!

Tried something new for dinner tonight that I will put as an appetizer on my menu! It was delicious! Italian bread grilled to a crisp with olive oil, topped with Buratta (a fresh mozzarella with creamy curds in the center,) bruschetta seasoned with fresh garlic, basil, sea salt and cracked ground black pepper. Finished with a few red pepper flakes and balsamic reduction!!
Admission….. since it was supper, I ate two, and loved them both!! 😂

I cleaned out my canning cupboard yesterday. I was in DIRE NEED of my homemade Marinara sauce. Thanks to Wally Ditsworth, and Kim, from “The Burg,” I was able to get lots of crushed tomatoes! Made sauce today and am processing 2.5 canners full!! And yes, I still have to fill all of the remaining jars on the counter!!! But I think I’ll be done for today after the last canner processes!!

What a fun day!!! Quinn was treating her dad to a cooking class! They came from Bettendorf, and we prepared Tuscan Bread with Fettunta spread, homemade pasta with Meat Ragu, Beef Braciole, Fontina Scalloped Potatoes, and Limoncello cake with Mascarpone frosting! How grateful I am to have had my grandson, Calvin, who is an aspiring chef, to help with preparation and serving!!! Quinn and dad had lots of leftovers to bring home for at least another meal or two!!

What a fun day! Santa brought Harrison Hughes, 8 yr. old son of Stephanie and Marshall, a chance to come for a cooking class with me! We modified the usual 5 course prep and meal to 2 courses! Harrison was a real trooper, making fresh tomato basil sauce for cheese ravioli, and cioccolatissimo cake! He was game to try every aspect of what we made, which made my heart so happy! Steph and Marshall were great helps which made things flow well! It was a great first class back after a lengthy hiatus! Looking forward into easing back into classes, but keeping group size small, which eases the tempo of preparation!! So Harrison has proven cooking Italian with kids works and is fun!

Well it has been a real interesting couple of years!!  I am planning to return to small size classes beginning in Januar...

Well it has been a real interesting couple of years!! I am planning to return to small size classes beginning in January! The 4th and 11th are already booked! Look me up if you’re interested! Gift certificates are available, and bookings are set on mutually agreed dates. Merry Christmas! Happy New Year!
