How does Peculiar Pig Eats still have fresh collard greens in the middle of a South Carolina summer?

Because farm-to-table is not just about buying local it is about knowing what is being grown, who is growing it, and why that variety was chosen.

These are Champion collards, a heat tolerant variety that is slower to bolt than many traditional collards. With careful watering, healthy soil, proper nutrients and protection from the intense Lowcountry heat, they can continue producing well into the summer.

Our collards come from Heritage Farm & Co. Heritage Farm & Co., a local farm that grows vegetables with chefs and the community in mind.

That is why collard greens are still on the Peculiar Pig Eats menu.

We are not purchasing greens that have traveled across the country just to keep a menu item available. We work with local farmers who select varieties capable of growing through our South Carolina seasons.

From the seed, to the soil, to the farmer, to our kitchen every step matters.

We are truly honored and grateful to partner with Bridges of Hope for the Hope Takes Flight event.

At Peculiar Pig Eats, farm-to-table is more than a phrase it is who we are. Every dish we prepare carries the story of our farm, our community, and the South Carolina farmers and producers who help make this work possible.

For this event, we are proud to bring a biscuit bar experience rooted in Southern tradition, and genuine care. We appreciate Bridges of Hope for recognizing the heart behind what we do and for allowing us to be part of an event that is focused on nourishing people in every sense of the word.

From Palmetto Palate Top Chef to serving the people who help feed South Carolina what an honor.

We’re grateful to the Orangeburg Area Cattlemen’s Association for the shoutout and excited to cater Thursday’s meal. Peculiar Pig Eats may be known for award-winning pork, but we’re always proud to serve exceptional food that celebrates the full strength of South Carolina agriculture.
