Behind the scenes…
We get asked often, “Why are you only open a few days a week?”
The answer is: because we’re already working on this thing 7 days a week.
Sunday — placing food orders, deep cleaning, and getting organized for the week ahead.
Monday — receiving deliveries, laundry, bookkeeping, and more cleaning.
Tuesday — food prep.
Wednesday — more food prep.
Usually Thursday-Saturday is when we open our doors to the public. Even if we’re only open for a 3-hour lunch service, our day typically starts around 6 AM and doesn’t end until 6 PM.
The reason? The majority of what comes out of our trailer is made from scratch. There’s a lot that happens before the window ever opens.
People will see a line and say, “Your trailer must be a gold mine!”
The reality? Not exactly.
A busy service is rewarding, but it’s only one small piece of the picture. There are hours and hours of work that happen behind the scenes that most people never see.
This isn’t a post to justify our schedule or complain. We truly love what we do. We put into this business the same amount of effort we hope to get out of it.
