Celiac is a condition that damages the lining of the small intestin and prevents it from absorbing parts of food that are important for stayng healthy. The damage is due to eating gluten, which is found in wheat, rye, barley and possible also oats. Now that you know what it is and what it those I could go on. With this my journey began, but on this journey I was not alone I had great company, my brother Joe and my nephew Cosimo also with celiac. My line of gluten free baked goods, entrees, soups and specialties salads are heavenly, like one of my customers told me a few weeks ago. The story will contnue.....i
