Portuguese Sausage Golden Bao Buns, a staple brunch item on our Saturday menu served from 7:30 am to 1 pm.

A local favorite breakfast sausage paired with cheese omelet stuffed in our golden bao bun. Want to make it a little different? Ask for our Spicy Ketchup on it.

The almost FAMOUS KOREAN FRIED CHICKEN by Big Island Provisions & Sundries was described by a guest as the “BEST.” Another person said, “this is the ONLY REASON why I come to this event!” It sells out fast, it seems like the same people order it every week leaving those who come later out of luck.

We only bring a limited amount. It takes up a lot of refrigeration space and at least 15 minutes to finish when you order, if the fryers are not full. We don’t sandbag orders in advance.

I LOVE IT because even with the sauce on, the skin stay CRISPY. If we make it in advance, the skin will get soggy. So it’s picked up to order.

The chicken starts off like any other chicken a blank canvas. We buy fresh chicken thighs for this dish. We use a flour mixture to coat the chicken and fry it in oil. Cool it. When you order it, we fry it again. It takes time but well worth it.

It’s not always so serious on the truck. These girls always find time to have some fun! I didn’t know they took some pictures until I went scrolling thru the camera. They’re such great kids and were very proud of them.

Many of our regular guests had commented how they have become young adults from when we started. They also tell us where in town they’ve seen them after school. People drop off treats to them, they’re spoiled.

When it comes time to do some cleaning, they do it. Maybe not with a smile. But it brings me a smile. They know if it’s done right it gets done faster and they are pau.

Chelsie started cleaning inside of the hoods years ago. She could stand up tall and was the perfect height to wipe in there. She can do it by herself, I don’t have to pre spray and then clean behind her anymore.

Kailee has a handle on the power washer and can clean the hood filters, she’s even told me she does a better job than me.

When our two oldest come home and are working the truck, they always tell them what to do. Kailee likes to remind them that they’re seasonal and she’s the FULL Time MANAGER and Chelsie is the HR Head. So if they don’t like it they can complain to Chelsie.

It’s a blessing that their souls found their way to us.

Many of our guests ask us, “what’s the mushroom ragout?” To put it out there, this is how it’s made and where it’s used. It’s a flavor bomb, your mouth will love.
